I added coloured text inside a History entry but this does not display when I look at the history section inside a contact record, why?

The coloured text does not show up inside the History log as shown below as we use plain text which has no html:
If you record information inside the Notes section – any coloured text used in this part of the system will be displayed inside the contacts record as shown below:
